Fudo: Spicy, Crunchy, Sweet

Posted by Liz and John Attaway, 5/19/19

Nestled in a Chamblee live-work community off Peachtree, Fudo has an intimate atmosphere and friendly service. The most amazing thing about Fudo? The number 48. We sat down and counted the number of specialty sushi rolls you can choose from when dining at the restaurant, that number is 48. This is in addition to all the hand or traditional rolls, as well. They have so many combinations, it was so hard to decide on just a few to try. Our waitress helped us pick something that we’re calling: spicy-crunchy-sweet. One spicy, one crunchy, one sweet roll that would round out the meal. Diving in…

We sampled the brussel sprouts appetizer and it is one of the most unique around with a creamy garlic ponzu sauce that’s sweet and spicy along with the crispy, fried sprouts. It was just the right amount of crunch followed by sweetness and spicy. Uniquely delicious.

Of the three rolls we chose, our favorite roll is still the Hunger Games Roll. We had this at the grand opening and couldn’t pass up having it again. It’s the most flavorful roll we’ve found on the menu with a smoky, creamy aioli topped with spicy sriracha and jalapeno that lingers in the back of your throat. No wasabi needed. On top of that, the fish are cut just right and a crunchy asparagus to give it a slight crunch. All around a solid bite that we’re going to get again! Yum.

The other two rolls were delicious as well: Mono and My Idol. Immediately upon trying the mono two things stuck out: the crunch and the wasabi tobiko. The tempura crunch starts off the bite, smooth fish in the middle, then comes the spice of the wasabi tobiko. A great addition on the end to round out the flavor and goes perfectly with the pop of the eggs. My Idol was smoother, sweeter of all the rolls. Very rich and creamy, with the sweetness and crunch of the mango, then the richness of the sauce, as well as the pop of the red and white tobiko. What a great way to fill out a meal with everything from smoky spicy, to crunchy, to sweet and rich.

No matter what you pick, you’ll find something original and new at Fudo. The drinks are on point and have a ton of options for those who don’t prefer raw fish or sushi.  Since Fudo is in our hood, we’ll be heading back soon, shall we meet you there?

Second Self City Winery Collaboration Oathbreaker and We All Must Die Release

Date: Saturday, May 18th and Sunday, May 19th

Time: All Day

About: Second Self Beer Company, the craft brewery based in Atlanta, Georgia, will release a limited dual bottle collaboration with City Winery: Oathbreaker, a dark farmhouse ale, and We All Must Die, a hoppy farmhouse ale, during the Game of Thrones finale weekend in May. Both offerings – Oathbreaker at $15 per bottle, We All Must Die at $18 per bottle – will be sold at Second Self while supplies last. Although available separately, Second Self recommends purchasing these varieties together to experience the full breadth contrast of fermenting with wine barrels versus incorporating must. Beginning on Saturday, May 18, Second Self will officially debut Oathbreaker and We All Must Die at its Westside tasting room, and on Sunday, May 19, both beers will also be sold at a Game of Thrones series finale party hosted at the brewery. In addition to tasting the beer, guests to the party will have the opportunity to interact with medieval characters and enjoy gothic-inspired fare from Illegal Food. Oathbreaker (8.3% ABV) 200 bottles – is a dark farmhouse ale that is 100%  fermented in City Winery Petite Sirah barrels with Second Self’s Sadboy culture (a blend of Brettanomyces Lambicus and Belgian Saison yeast). Marked by rich notes of chocolate and black cherry, a mild roast, and medium body, this dark farmhouse ale is very complex and opens up even more as it warms. It is bottle conditioned with white wine yeast, resulting in higher carbonation and finer texture. We All Must Die (7.0% ABV) 80 bottles – is a hoppy farmhouse ale fermented in stainless then blended with a ¼ pound of Viognier must per gallon from City Winery, in a neutral oak barrel. From there, the beer was finished with Brettanomyces bruxellensis along with the native yeast from the must. When you first decork this beer, you get the full spectrum of Brett’s springtime aroma and flavor with notes of hay and fully ripened fruit. This is complemented with the citrus notes of the hops while the acidity of the vigonier must provides a nice brightness to the beer, as well as a very dry finish. It is bottle conditioned with white wine yeast, resulting in higher carbonation and finer texture.
